A delicious little side dish for when you want some comfort food, carrot fries are baked instead of fried.
6 to 8 carrots
1 tbsp. canola oil
1/4 tsp freshly ground nutmeg
1/2 tsp. salt
Preheat the oven to 450 degrees.
Peel and wash your carrots. Slice them into strips, approximately 2 to 3 inches long, and about 1/8 inch thick.
Toss them in a bowl with the oil. Spread them out on a baking sheet.
Sprinkle the carrots with nutmeg and salt. Bake for about 15-20 minutes, until they begin to caramelize.
Serve with a low carb ranch or blue cheese dressing dip.
