This salad is delicious for breakfast, as a refreshing lunch, or even as a dessert.
2 ripe avocados, peeled and pitted
1 cup strawberries, hulled and sliced
1 cup seedless grapes, cut in half
4 cups radicchio
1 tbsp. extra virgin olive oil
1 tbsp. plain Greek yogurt
¼ cup raspberry vinegar
1 tsp honey
½ cup toasted pine nuts
Cut avocado flesh into chunks. Squeeze the juice of one lemon over the avocado chunks immediately.
Add the strawberries and grapes. Lay out a bed of radicchio and spread the fruit mixture over it.
In a bowl, whisk together the olive oil, yogurt, vinegar and honey. Pour them over the salad.
Sprinkle toasted pine nuts over the top and enjoy.
