Diabetic Friendly Vegetarian Sausage Breakfast Sandwiches

Sausage makes a hearty, delicious breakfast, but we can all do without the excess fat. Try this homemade "veggie" sausage instead, with meat substitute made out of soy. Make an open sandwich with toast and an egg. This breakfast serves four, and the meat eaters in the family may never know the difference.

Ingredients

12 oz. veggie crumbles
1/3 cup water
2 tsp olive oil
2 cloves garlic, minced
2 tablespoons minced parsley
1 teaspoon crushed fennel seed
1 teaspoon dried sage
1/2 tsp ground marjoram
3/4 tsp salt
1/2 tsp pepper
3 tbsp. grated parmesan cheese
4 eggs
4 slices sprouted wheat toast

Instructions

Put the veggie crumbles in the pan with 1/3 cup of water and cover. Cook on medium-high heat for four minutes, then reduce the heat to low. Let it simmer for another four minutes.

Drain the veggie crumbles and return the pan to the heat. Add the oil, and return the veggie crumbles to the pan along with the garlic, parsley, fennel, sage, marjoram, salt and pepper. Sauté them, stirring frequently, on medium heat for about 3 or 4 minutes.

Remove the veggie crumbles from the heat. Lay each piece of sprouted wheat toast on a plate. Divide the veggie crumbles over the toast.

Top each open sandwich with a poached or fried egg. Salt and pepper to taste.
